- 1 lb boneless chicken thighs
- 1 lb boneless chicken breast
- 4 bacon strips, cooked and crumbled
- 1 sm yellow onion, minced
- 1 stalk celery, minced
- 1 T fresh grated ginger
- 1 large carrot, thinly sliced
- 1 cup frozen peas, cooked
- 1/2 habanero or similar pepper, seeded and minced
- 1/4 cup tamari or soy sauce
- 1/4 cup frozen pineapple juice concentrate
- 2 garlic cloves, crushed
- 1/4 cup dark rum
- 1 cup water
- 1 cup basmati rice, brown or white
Add rice and 2 cups additional water. Cook another 20 minutes or until desired consistency.
